Casey holds a BS in Science-Business from the University of Notre Dame and is currently studying to become a Nutritional Practioner Therapist (completion in Oct. 2013). Casey enjoys Crossfit, running and incorporating a grain free/Paleo/GAPS diet into her lifestyle.
The journey to her interest in nutrition began about 6 years ago, when she was struggling with many health issues (joint pain, sleep issues, stomach issues, fertility…you name it). After many many hours with doctor after doctor she came upon a functional holistic doctor who spent several hours getting to the root of the issue….turned out Casey had Celiac Disease with additional autoimmune reactions to soy and dairy. She quickly changed her diet and saw a light at the end of the tunnel. This is when Casey began to see the power in food and its impact on one’s health. Digestion, sleep and fertility issues all improved and she is now blessed with two beautiful children. Her diet has continued to evolve as she learns more and is excited to share this knowledge and experience with others.
